Wheat flour has five grades: fine wheat flour, premium grade, first and second grade and flour without grade. Grades differ in the size of the grind, gluten content, color, chemical composition and baking properties.
Wheat bran is crushed hard shell of grain, which remains in the course of wheat processing. The composition of wheat bran contains a complex of vitamins B, E and provitamin A, necessary for the human organism. It is also rich in magnesium, potassium, chromium, copper, zinc, selenium, iron, and other valuable macro- and microelements. Therefore, wheat bran often becomes a component of dietary and preventive food products.
